This is a great pan, as a stainless. It does not do omelets well, but then I would not expect that from a stainless pan. It is obviously well built out of premium stainless. It’s very sturdy in every way, including the handle. I like that it is all stainless, including the handle, because it allows me to put it in the oven. I’m careful putting it in the oven, of course, and I keep the temp below 400, although I think it can go a little higher. I’m also careful to not overheat it on the stove. I know it can be washed in the dishwasher, but I always wash it by hand, to avoid discoloration or patina damage from chemicals. I bought it for life, which is why I think it is worth the care. I also bought the 10 inch version, which is just as good. I have other Calphalon cookware pieces, and they are all of excellent quality, including the non-stick surfaces on some of them.

I purchased this to replace a large “non-stick” skillet that does nothing BUT stick to everything! Received yesterday and sauteed onions for hamburger steak in it. Meal turned out wonderful. Looked like something off of a cooking show.
I look forward to cooking many more meals in it! Purchased Bar Keepers Friend and a Non-scratch Scotch Brite pad for cleaning. Definately when using for cooking, keep in mind Jeff Smiths (The Frugal Gourmet) adage: Hot pan, cold oil, food won’t stick.

I had used the old fashioned plain iron omelette pan years ago and it worked great..no washing, just seasoned and wiped clean, but it looked awful so I then switched to a “non-stick” version until I recently read all of the articles about the dangers of plastics and coatings so I purchased the Calphalon Tri-ply Stainless Steel 8-Inch Omelette Pan. After experimenting with the right heat before adding butter, I’m delighted with the pan. It makes perfect omelettes and looks beautiful after a simple washing.
Now I can have my morning omelette and not worry about fumes or chemicals leaching into foods from a non-stick coating. I wonder why anyone would even need “non-stick”.

I just recently got rid of all my old Farberware Millennium tri-ply (with the old tri-ply disk glued to the bottoms) and purchased a combination of Cuisinart Multiclad Pro and Calphalon Tri-Ply Stainless. I love them both! They are so similar that it really doesn’t matter to me which I’m using. They clean up extremely well with Barkeeper’s Friend, and I sometimes use a Scotch Brite pad too, but I have found that it does leave a little bit of light scratching on the pans. That doesn’t bother me, because I don’t display my pans. They go in the cabinets and cupboards and I cook with them every day. This 10″ skillet is the perfect size for most of my skillet-cooking. For those times it isn’t, I also purchased the Calphalon Tri-Ply Stainless deep 3-qt. saute pan. The cookware is also extremely beautiful (both of these brands). I’m really thrilled with my purchases and am so glad I decided to make the switch. I will say that I prefer the see-through glass lids of the Calphalon over the stainless steel ones of the Cuisinart. The glass lids allow me to be able to keep the lids on more during the cooking time. All of the open skillets don’t come with lids at all, so I’m using a previous Calphalon glass lid with my 10″ skillet (and I use a previous Farberware Millennium one with my Cuisinart Multiclad Pro skillet). They work just GREAT! NO NEED to go and purchase highly over-priced individual replacement lids. Incidentally, the 3-qt. saute pan COMES WITH its own lid, so you don’t have to worry about it in that particular case!

Purchased this item six months ago. It is outstanding in the quality of its construction and design. Much more than merely an omelet pan, this utensil is perfect for general cooking use. By preheating the pan, using room temperature food, and not using the “blast furnace” setting on your cooking surface, the pan releases food just as easily as the coated “non-stick” variety and without the possibility of generating toxic byproducts.
The manner in which the handle is attached to the pan creates a minimal path for heat conductivity. With the pan surface equally heated, a cast iron handle requires a pot holder in order to comfortably touch, this pan can be handled easily by your bare hands. The handle is attached solidly with three bolts, but the end of the handle nearest the pan is split which dramatically reduces the handle temperature.
It is easy to clean just using soap and water. If, as I did, you leave food in the pan and forget to turn the burner off, food will stick. Most of it can be easily removed but for stubborn stains, a little application of “Bar Keepers Friend” will return the surface to shiny newness.
Cleaning the bolt attachment on the outside and on the inside of the pan is a little tricky, but any pan with similar construction would be just as problematic.
It can be difficult to get a cleaning pad in some of the small spaces around the bolts and just above the handle. A small amount of effort and a bit of patience will get the job done, however.
For even the casual cook, this cookware is a must have investment. It makes creating an omelet seem like the easiest task a cook could face.
I’ve always been a fan of cast iron, or porcelain coated cast iron, but this little gem has convinced me that Calphalon Tri-Ply is the perfect solution. Easy to use, easy to care for, easy to handle. It’s a must purchase for your kitchen.
